Just The Fats!
All Fats Are Not Created Equal.
The healthy fats in certain oils are good for your heart and health.
The majority of plant oils are primarily monounsaturated and polyunsaturated fats, which can lower your LDL or “bad” cholesterol. Olive oil contains 13g of total fat per tablespoon (10g monounsaturated; 1g polyunsaturated; 2g saturated; .1g omega-3s).
Monounsaturated fat is considered to be probably the healthiest type of general fat. Health benefits include lower cholesterol and reduced risk of heart disease. This fat also contains essential fatty acids for healthy skin and development of body cells and it is also believed to protect against certain cancers such as breast cancer and colon cancer.
Polyunsaturated fat is a good source of the omega-3 fatty acid know as ALA found in vegetables. While it isn’t as potent as the kind found in fish, it helps improve the immune function and reduce joint pain and inflammation.
Your Body Won’t Run Well on a Totally Fat-Free Diet.
US Dietary Guidelines recommend keeping total fat intake to 20% to 35% of your total daily calories.
The American Heart Association reports that 80% of those fat grams should come from the monounsaturated and polyunsaturated kinds found in plant oils and other healthy fat sources like nuts and avocados.
Tara Gidus, R.D., a sports dietician and spokesperson for the American Dietetic Association, states “We all need fat each day to absorb fat-soluble vitamins A, D, E and K which our bodies can’t process by themselves”. (February 2008 edition of Runner’s World magazine)
New research suggests that lycopene and other antioxidants found in fruits and vegetables are absorbed better when combined with good fats.

First, You Pick Your Greens
Arugula, Boston Bibb, Belgian Endive, and Spring Mix to name a few. Select any combination and amount of greens you like. We don't believe in over-portioning. You decide what you want and how much.
Next, You Choose Your Fillers
Over 50 fresh fillers—everything from Gruyere cheese, freshly turned artichokes, wild rice, Asian pear, quinoa, avocado to garlic white beans.
Then, Select a Vinaigrette
Toss your salad with one of our vinaigrettes made from 100% Extra Virgin Olive Oil & Aged Vinegars.
A typical salad with four to five fillers costs between $3.75 and $4.75
